Red Velvet Cupcakes

Hi, welcome back to my blog. I know I haven't posted for a while but I will be trying really hard to post frequently from now on. I have always wanted to make red velvet cupcakes, because they look so amazing and are really easy to make. I decided to make them a few days ago and I thought I would share my recipe with you.


This recipe makes 24 cupcakes but you can double or half this recipe depending on how many you would like.

Lets get started.

You will need:

(For the sponge)
235g Self-Raising Flour
15g Cocoa Powder
250g Caster Sugar
3/4 tsp Salt
270g Butter
4 large eggs
3 tbsp Buttermilk
1 tsp Red food colour paste (make sure to use the paste as the liquid is not strong enough)
1 tsp Vanilla Extract
3/4 tsp Bicarbonate of Soda
1.5 tsp Cider Vinegar

(For the icing)
150g Butter
240g Cream Cheese
840g Icing sugar
Red Sprinkles (optional)

To make the cupcakes:

1.Into a bowl place your Self-Raising Flour, Cocoa Powder, Caster Sugar and Salt.
2. Mix these ingredients together until they are well combined.
3.Then mix in your Butter, Eggs and Bicarbonate of Soda.
4. Add your Buttermilk, Cider Vinegar, Vanilla Extract and Red food colour paste.
5.When all of your ingredients are well combined line your cupcake tray with cupcake cases and add your cake batter about 2/3 full.
6.Put your cakes into the oven on gas mark 3/ 170 celsius/325 fahrenheit for about 22 minutes.

To make the icing:

1. Mix your Butter and Cream Cheese until they are light and fluffy.
2.Add half of your icing sugar and mix that in.
3.Do the same with the rest of your icing sugar.
4.You can spread your icing on or pipe it in a piping bag.
5.For extra decoration you can add sprinkles I like to use red.

Double Chocolate Cookies

Hey guys welcome back to my blog. I know I haven't posted in a really long time but if I am completley honest with you it is because I have had no inspiration for any blog posts. you might realise that most of my blog posts have been deleted and that is because I have decided to make this blog a baking blog. I have a passion for baking and so I thought why not blog it.

Lets get started. Just before I start this recipie though I would just like to point out that this is not my own recipie or my own pictures but I saw Zoe Sugg make them and I thought why not show you guys. If you would like to watch Zoe's video the link will be at the bottom of this blogpost.

Ingridients:

200g of butter or margarine(at room temperature)
1 large egg
Chocolate bars(you can use how ever many you want but Zoe uses two large ones)
75g of cocoa powder
300g of caster sugar
275g of self raising flour


To make the cookies:
1. Pre-heat your oven to 200 degrees celcius or gas mark 6
2. Mix together your sugar and butter in a mixing bowl
3. Crack in your egg and mix it in.
4. Add in your self-raising flour and your cocoa powder and stir together.
5. Break up your bars of chocolate and mix them into your cookie mixture.
6. Roll your mixture into balls depending on how big you want you cookies.
7. Put your balls of dough on a greased baking tray and put them in the oven until they are ready.

Lemon Drizzle Cake

Hey guys I am so sorry I haven't posted for a while but I have been so busy. I thought I would show you guys this really easy lemon drizzle cake. I hope you enjoy it.



For the cake you will need:

7oz/200g butter
7oz/200g caster sugar
Zest of 2 lemons
3 medium eggs
7oz/200g self raising flour

For the drizzle topping you will need:

3oz/85g granulated sugar
Juice of 4 lemons
8 inch round cake tin

Cake

1. You need to pre heat your oven to 180 degrees celcius or gas mark 4.
2. Grease and line your cake tin.
3. Cream your butter, sugar and lemon zest (cream means to stir until fluffy) (to zest your lemon grate the skin of the lemon)
4. Add your eggs one at a time ( if your mixture starts going lumpy and curdling add 1tsp flour)
5. Sift the flour and stir it into the mixture

Drizzle

1. Put your four lemons in the microwave for about 5-10 seconds (this helps the lemon to bring out all it juices)
2. Cut your lemons in half and squeeze the juice into a mixing bowl.
3. Add your granulated sugar to your mixing bowl and stir it into the lemon juice.
4. As soon as your cake is out the oven pierce about 20 holes in the top of your cake.
5. Pour you drizzle all over the cake and let the drizzle sink into the cake.

Healthy Chocolate Milkshake Recipie!




Today I wanted to show you guys a chocolate milkshake that tastes amazing but is healthier than your usual chocolate milkshake. I know this is whta everyone says, but one of my new years resolutions is to eat healthier. I wanted to have some treats but I had to make sure they were good for me. When I found this chocolate milkshake recipie on Niomi Smart's blog I knew I had to try it. I changed some ingredients to suit me and I can't believe how good it tastes, so I thought I would show you guys my version of Niomi's chocolate milkshake.


Ingredients:

1 Frozen Banana
1 tbsp Maca Powder
1 tbsp Unsweetened Cocoa Powder
1 tbsp Almond Butter
1 tbsp Nutmeg/Cinnamon
1 cup Almond Milk
2 Ice Cubes

How to make this milkshake:

This is so simple to make as there are only 3 steps!

1. Add your almond milk, ice cubes and almond butter to your blender ( I use a nutri bullet which is £99.95 but I got it in the sale for £55.95), blend them together.

2. Next add your frozen banana, maca powder, cocoa powder and cinnamon. Blend them with your other mixture.

3. Pour your milkshake into a glass and enjoy!
